  • 1 - 10 Pounds (lb) whole turkey, divided
  • 0.5 - Cups (cup) olive oil
  • 1 - Tablespoon (tbsp) fresh sage, minced
  • 1 - Tablespoon (tbsp) fresh thyme leaves
  • 1 - Tablespoon (tbsp) fresh rosemary, minced
  • 1 - Tablespoon (tbsp) salt
  • 1 - Teaspoon (tsp) black pepper, ground

Steps

  1. Gather all ingredients.
  2. Preheat the oven to 350 degrees F (175 degrees C). Place a roasting rack on a baking sheet.
  3. Place the turkey breast-side down on a cutting board. Using sharp kitchen shears, cut along one side of the backbone.
  4. Repeat on the other side of the backbone. Remove the backbone and reserve it for making turkey stock or gravy.
  5. Press firmly down on both sides of the turkey to flatten it.
  6. Flip the turkey breast-side up and place it on the roasting rack. Tuck the wing tips under the turkey. Pat the skin dry and rub olive oil over the entire turkey. Season with sage, thyme, rosemary, salt, and pepper.
  7. Roast in the preheated oven for 1 hour and 30 minutes, rotating the baking sheet every 30 minutes.
  8. Increase the oven temperature to 400 degrees F (200 degrees C) and continue roasting until the skin is crisp and golden, about 15 minutes more. Ensure the internal temperature reaches 165 degrees F (74 degrees C) in the thickest part of the thigh.
  9. Remove the turkey from the oven, cover loosely with a doubled sheet of aluminum foil, and allow to rest for 10 to 15 minutes before slicing.
  10. Serve hot and enjoy!

Cook's Note: For added flavor, consider brining the turkey after removing the backbone. Alternatively, melted butter can be used in place of olive oil, and the turkey can be basted with it every 30 minutes while roasting.
