- 1 - Cup (cup) semisweet chocolate chips
- 0.25 - Cup (cup) white sugar
- 4 - Tablespoons (tbsp) water
- 1 - Teaspoon (tsp) unflavored gelatin
- 1 - Tablespoon (tbsp) instant coffee powder
- 3 - Whole eggs, separated
- 1 - Teaspoon (tsp) vanilla extract
- 0.5 - Cup (cup) heavy whipping cream
- 2 - Tablespoons (tbsp) white sugar
- 2 - Tablespoons (tbsp) unsweetened cocoa powder
- 2 - Tablespoons (tbsp) confectioners' sugar
- 1 - Cup (cup) heavy whipping cream
- 0.5 - Teaspoon (tsp) almond extract
- 0.5 - Teaspoon (tsp) vanilla extract
Steps
- Sprinkle the gelatin over 2 tablespoons of water and set aside. Separate the eggs and lightly beat the yolks.
- In a small saucepan, heat the chocolate chips, 0.25 cup sugar, 2 tablespoons water, and coffee powder, stirring constantly until melted. Add the softened gelatin and heat until dissolved. Remove from heat and gradually whisk the chocolate mixture into the beaten egg yolks. Return the mixture to the pan and cook over medium-low heat, stirring constantly, until it thickens slightly. Remove from heat and stir in 1 teaspoon vanilla extract. Allow cooling to room temperature.
- Once cooled, beat the egg whites to soft peaks. Gradually add 2 tablespoons of sugar and beat until stiff but not dry. Fold the whipped egg whites into the chocolate mixture. Whip 0.5 cup cream until stiff and fold into the chocolate mixture. Spoon into the pie crust and refrigerate.
- For the topping, combine cocoa and confectioners' sugar with 1 cup of whipping cream. Chill for 30 minutes, then whip until stiff. Stir in almond extract and 0.5 teaspoon vanilla extract. Top the pie with this chocolate whipped cream. Chill the pie for several hours or overnight until set.
