  • 1 Cup unsalted butter, softened
  • 1 Cup white sugar
  • 2 Cups all-purpose flour
  • 0.5 Teaspoons (tsp) cinnamon, ground
  • 1 Large egg, divided
  • 1 Teaspoon (tsp) water
  • 0.5 Cup walnuts, minced

Steps

  1. Preheat the oven to 300 degrees F (150°C). Prepare two rimmed baking sheets.
  2. In a mixing bowl, beat the butter and sugar with an electric mixer until light and fluffy. Add the egg yolk and mix until thoroughly combined and creamy.
  3. Gradually add the flour and cinnamon to the mixture, mixing until the dough is well combined.
  4. Spread 2/3 of the dough over one baking sheet and the remaining dough over half of the second baking sheet. Press down on the dough with your fingers, then score with a fork.
  5. In a small bowl, whisk the egg white and water together. Brush this mixture lightly over the dough and sprinkle the walnuts on top.
  6. Bake in the preheated oven for 30 minutes.
  7. Remove from the oven and immediately cut into 24 squares or rectangles. Allow the cookies to cool completely on the baking sheets before removing and separating them.
