Ingredients

  • 2.5 Teaspoons (tsp) vegetable oil, divided
  • 6 6 Inch (in) corn tortillas, torn
  • 3 Cups chicken broth
  • 0.5 Teaspoons (tsp) cumin, ground
  • 0.5 Teaspoons (tsp) chili powder
  • 0.5 Teaspoons (tsp) oregano, ground
  • 1 15 Ounces (oz) black beans, drained
  • 1 15 Ounces (oz) whole kernel corn, drained
  • 2 Skinless, boneless chicken breast halves, diced
  • 0.5 Cups salsa
  • 0.5 Cups cilantro, minced

Steps

  1. Heat 2 teaspoons of the vegetable oil in a large pot over medium heat. Add half of the tortilla strips, stirring often, until crisp. Drain on paper towels. Repeat with the remaining 0.5 teaspoon of oil and the remaining tortilla strips. Set aside.
  2. Add the chicken broth, cumin, chili powder, and oregano to the pot. Raise the heat to high and bring to a boil.
  3. Add the black beans, corn, chicken pieces, and salsa to the pot. Reduce the heat to low, stir, and simmer for about 2 minutes, or until the chicken is cooked through and no longer pink inside.
  4. Stir in the cilantro and half of the reserved tortilla strips.
  5. Ladle the soup into individual bowls and garnish each bowl with some of the remaining tortilla strips. Serve hot and enjoy!
