Ingredients

  • 6 Tablespoons (tbsp) extra-virgin olive oil
  • 6 Cloves garlic, minced
  • 0.75 Cups broccoli florets, chopped
  • 0.5 Cups mushrooms, sliced
  • 6 Ounces (oz) anchovy fillets, minced
  • 1 Cup water
  • 0.25 Cups green onions, minced
  • 0.5 Cups tomatoes, diced
  • 2 Tablespoons (tbsp) fresh parsley, minced
  • 1 Teaspoon (tsp) extra-virgin olive oil
  • 16 Ounces (oz) package linguine pasta, packaged
  • 1.5 Tablespoons (tbsp) crushed red pepper flakes
  • 1 Pinch black pepper, to taste

Steps

  1. Heat 6 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic, chopped broccoli, and sliced mushrooms, cooking until they are lightly browned.
  2. Stir in the minced anchovies and water, cover the skillet, and let it simmer for 4 to 5 minutes.
  3. Add the minced green onions, diced tomatoes, and minced parsley to the skillet. Cover again and simmer until the vegetables are soft, about 3 to 4 minutes.
  4. Meanwhile, bring a large pot of water to a boil, adding 1 teaspoon of olive oil. Cook the linguine until al dente, approximately 7 to 8 minutes, then drain.
  5. Toss the cooked linguine with the anchovy mixture and crushed red pepper flakes. Season with black pepper to taste if desired.
  6. Serve immediately and enjoy your savory garlic anchovy linguine!
