Ingredients

  • 1 Pound (lb) rotini pasta
  • 5 Small zucchini, sliced
  • 0.33 Cups (cups) olive oil
  • 4 Cloves garlic, minced
  • 1 Pinch crushed red pepper flakes, to taste
  • 0.33 Cups (cups) fresh parsley, chopped
  • 0.5 Cups (cups) Parmesan cheese, grated
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. Bring a large pot of lightly salted water to a boil. Cook the rotini pasta in boiling water until tender yet firm to the bite, about 8 to 10 minutes. Drain and set aside.
  2. Fill a medium saucepan with lightly salted water. Add the sliced zucchini and bring to a boil; cook until the zucchini is tender, about 3 minutes. Drain.
  3. Meanwhile, heat the olive oil in a large skillet over medium heat. Sauté the minced garlic and crushed red pepper flakes in the hot oil until fragrant.
  4. Add the cooked zucchini and chopped parsley to the skillet. Cook, stirring occasionally, until the parsley is wilted.
  5. Add the cooked pasta to the skillet and toss until well combined with the zucchini mixture.
  6. Sprinkle the dish with grated Parmesan cheese and season with salt and pepper to taste. Serve immediately.
