Ingredients

  • 2 Tablespoons (tbsp) vegetable oil
  • 1 Tablespoon (tbsp) fresh ginger, minced (Optional)
  • 3 Serrano chile peppers, minced (Optional)
  • 0.5 Cups baby corn, sliced
  • 1 Red bell pepper, sliced
  • 2 Pounds (lb) bok choy, sliced
  • 3 Cups fresh bean sprouts
  • 0.25 Cups Asian fish sauce
  • 3 Tablespoons (tbsp) Chinese oyster sauce
  • 4 Green onions, sliced
  • 2 Tablespoons (tbsp) cilantro leaves, torn (Optional)
  • 2 Tablespoons (tbsp) sesame seeds, toasted (Optional)

Steps

  1. Heat the vegetable oil in a wok over high heat. Once hot, add the minced ginger and minced chiles. Stir and cook until the ginger is fragrant, about 30 seconds.
  2. Add the sliced baby corn, sliced red bell pepper, and sliced bok choy stalks to the wok. Stir-fry until the red pepper begins to soften, approximately 3 minutes.
  3. Incorporate the sliced bok choy leaves and fresh bean sprouts into the wok. Cook until the leaves darken and wilt, about 1 to 2 minutes.
  4. Pour in the Asian fish sauce and Chinese oyster sauce. Sprinkle with sliced green onions and stir everything together.
  5. Serve the stir-fried vegetables garnished with torn cilantro leaves and toasted sesame seeds, if desired. Enjoy your zesty ginger stir-fried bok choy with bean sprouts!
