Ingredients
- 2 Pounds (lb) skinless, boneless chicken breast halves, sliced
- 0.25 Cups (cup) cornstarch
- 2 Large eggs, whisked
- 1 Teaspoon (tsp) salt
- 0.5 Teaspoon (tsp) black pepper, ground
- 6 Tablespoons (tbsp) all-purpose flour
- 1 Teaspoon (tsp) baking powder
- 0.5 Cups (cup) vegetable oil
Sauce
- 0.5 Cups (cup) green onion, sliced
- 2 Tablespoons (tbsp) fresh ginger root, grated
- 4 Teaspoons (tsp) sesame oil
- 0.5 Cups (cup) water
- 0.5 Cups (cup) white sugar
- 0.25 Cups (cup) distilled white vinegar
- 2 Tablespoons (tbsp) cornstarch
- 2 Tablespoons (tbsp) soy sauce
- 0.25 Cups (cup) oyster sauce
- 0.25 Cups (cup) ketchup
Steps
- Gather all the ingredients.
- Coat the chicken pieces with cornstarch in a bowl and set aside. In a mixing bowl, whisk the eggs, salt, and pepper until combined. Stir in the flour and baking powder until no large lumps remain. Mix in the chicken pieces until they are evenly coated.
- Heat the vegetable oil in a large skillet or wok over high heat. Cook the chicken in the hot oil until golden brown and no longer pink inside, about 12 minutes. Set the chicken aside and keep warm.
- To make the sauce, reduce the heat to medium-high and add the green onion, ginger, and sesame oil to the skillet. Cook and stir until the onion is limp and the ginger begins to brown, about 1 minute. Pour in the water, sugar, and vinegar, and bring to a boil.
- Dissolve the cornstarch in the soy sauce in a small bowl and stir it into the vinegar mixture along with the oyster sauce and ketchup. Cook until the sauce has thickened and is no longer cloudy. Stir in the chicken and simmer until heated through.
