Ingredients
- 1 Cup warm water
- 0.25 Ounces (oz) active dry yeast, packaged
- 1 Pinch white sugar, to taste
- 3.33 Cups all-purpose flour
- 1 Tablespoon (tbsp) olive oil
- 2 Teaspoons (tsp) kosher salt
- 2 Cloves garlic, minced
- 1 Tablespoon (tbsp) fresh basil, minced
- 0.5 Cup olive oil
- 1 Teaspoon (tsp) garlic, minced
- 0.25 Cup tomato sauce, divided
- 1 Cup tomatoes, chopped and divided
- 0.25 Cup black olives, sliced and divided
- 0.25 Cup roasted red peppers, drained
- 2 Cups mozzarella cheese, shredded
- 4 Tablespoons (tbsp) fresh basil, minced
Steps
- Pour warm water into a large bowl. Dissolve yeast and sugar in the water. Let it stand until the yeast forms a creamy foam, about 5 to 10 minutes.
- Add flour, olive oil, and salt to the yeast mixture. Mix until the dough pulls away from the sides of the bowl.
- Turn the dough onto a lightly floured surface and knead until smooth, about 8 minutes.
- Place the dough in a well-oiled bowl, cover with a damp cloth, and let it rise until doubled, about 1 hour.
- Punch down the dough, knead in minced garlic and basil, and let it rise again until doubled, about 1 more hour.
- Combine olive oil and minced garlic in a microwave-safe bowl. Heat for 30 seconds in the microwave.
- Preheat an outdoor grill for high heat and brush the grate with garlic oil.
- Punch down the dough and divide it in half. Shape each half into an oblong, 3/8 to 1/2 inch thick.
- Place one piece of dough on the hot grill. Once the bottom crust is lightly browned, turn it over using two spatulas.
- Quickly brush the crust with garlic oil and top with half of the tomato sauce, chopped tomatoes, olives, red peppers, cheese, and basil.
- Close the grill lid and cook until the cheese melts. Remove from the grill and let it cool for a few minutes. Repeat with the second piece of dough.
