Ingredients

  • 1 Cup warm water
  • 0.25 Ounces (oz) active dry yeast, packaged
  • 1 Pinch white sugar, to taste
  • 3.33 Cups all-purpose flour
  • 1 Tablespoon (tbsp) olive oil
  • 2 Teaspoons (tsp) kosher salt
  • 2 Cloves garlic, minced
  • 1 Tablespoon (tbsp) fresh basil, minced
  • 0.5 Cup olive oil
  • 1 Teaspoon (tsp) garlic, minced
  • 0.25 Cup tomato sauce, divided
  • 1 Cup tomatoes, chopped and divided
  • 0.25 Cup black olives, sliced and divided
  • 0.25 Cup roasted red peppers, drained
  • 2 Cups mozzarella cheese, shredded
  • 4 Tablespoons (tbsp) fresh basil, minced

Steps

  1. Pour warm water into a large bowl. Dissolve yeast and sugar in the water. Let it stand until the yeast forms a creamy foam, about 5 to 10 minutes.
  2. Add flour, olive oil, and salt to the yeast mixture. Mix until the dough pulls away from the sides of the bowl.
  3. Turn the dough onto a lightly floured surface and knead until smooth, about 8 minutes.
  4. Place the dough in a well-oiled bowl, cover with a damp cloth, and let it rise until doubled, about 1 hour.
  5. Punch down the dough, knead in minced garlic and basil, and let it rise again until doubled, about 1 more hour.
  6. Combine olive oil and minced garlic in a microwave-safe bowl. Heat for 30 seconds in the microwave.
  7. Preheat an outdoor grill for high heat and brush the grate with garlic oil.
  8. Punch down the dough and divide it in half. Shape each half into an oblong, 3/8 to 1/2 inch thick.
  9. Place one piece of dough on the hot grill. Once the bottom crust is lightly browned, turn it over using two spatulas.
  10. Quickly brush the crust with garlic oil and top with half of the tomato sauce, chopped tomatoes, olives, red peppers, cheese, and basil.
  11. Close the grill lid and cook until the cheese melts. Remove from the grill and let it cool for a few minutes. Repeat with the second piece of dough.
