Ingredients
- 2 Tablespoons (tbsp) butter, divided
- 1 Tablespoon (tbsp) olive oil
- 0.5 Cups onion, minced
- 0.67 Cups Arborio rice
- 0.25 Cups dry white wine
- 3 Cups vegetable broth, boiling
- 0.5 Cups hearts of palm, sliced
- 0.25 Cups Parmesan cheese, grated
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 1 Tablespoon (tbsp) fresh parsley, minced
Steps
- Heat 1 tablespoon of butter and olive oil in a large, heavy-bottomed saucepan over medium-high heat. Cook and stir the onion in the hot butter-oil mixture until the onion begins to turn golden brown at the edges, about 2 minutes. Add the rice and stir until the rice is coated in oil and has started to toast, 2 to 3 minutes.
- Reduce the heat to medium and stir in the white wine. Cook until mostly evaporated, then stir in 1/3 of the boiling vegetable broth; continue stirring until incorporated. Repeat this process twice more, stirring constantly. Incorporating the broth should take 15 to 20 minutes total.
- When the rice is mostly tender but still has a very slight crunch, stir in the hearts of palm and Parmesan cheese until incorporated; season with salt and pepper. Cook for 1 more minute to heat through, then stir in parsley and the remaining 1 tablespoon of butter. Serve hot.
