- 1 6 Ounces (oz) can tomato paste
- 1 15 Ounces (oz) can kidney beans, drained
- 1 14 Ounces (oz) can vegetable broth
- 1.5 Quarts (qt) water
- 3 Tablespoons (tbsp) fresh basil, shredded
- 2 Tablespoons (tbsp) fresh oregano, shredded
- 1 Tablespoon (tbsp) salt
- 2 Cups uncooked elbow macaroni
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the potatoes, carrots, celery, onion, and garlic to the pot. Stir well.
- Mix in the tomato paste, kidney beans, vegetable broth, and water.
- Season the mixture with basil, oregano, and salt.
- Cook and stir the soup for 30 minutes, or until the vegetables are tender.
