- 5 Whole garlic cloves, minced
- 18.75 Ounces (oz) can tomatillos, drained
- 16 Ounces (oz) can chopped green chiles, packaged
- 11 Ounces (oz) can jalapeno peppers, drained
- 30 Ounces (oz) jar sliced nopalitos, drained
- 2 Teaspoons (tsp) dried oregano
- 20 Ounces (oz) can hominy, drained
- 4 Teaspoons (tsp) cumin seed
- 2 Cups crumbled queso fresco, grated
- 0.5 Cups fresh cilantro, torn
Steps
- Melt the lard in a large pot over high heat. Add the cubed pork and coriander seeds, cooking until the pork is browned, about 10 minutes.
- Stir in the onions, potatoes, carrots, garlic, tomatillos, green chiles, jalapeno peppers, nopalitos, and hominy. Season with oregano and cumin seed. Add water if the mixture seems too dry.
