- 0.75 Cups parsley, shredded
- 1 Whole lemon, juiced
- 3 Tablespoons (tbsp) red wine vinegar
- 3 Tablespoons (tbsp) olive oil, divided
- 1.5 Pounds (lb) red potatoes, sliced
- 1 Large red bell pepper, sliced
- 1 Large yellow bell pepper, sliced
- 1 Large green bell pepper, sliced
- 4 Stalks celery, sliced
- 1 Pound (lb) tomatoes, sliced
Steps
- Preheat your oven to 350 degrees F (175 degrees C).
- In a food processor, combine garlic, 1 pinch salt, paprika, cumin, and cayenne pepper. Process until a paste forms. Add cilantro and parsley, pulsing a few times to blend.
