- 3.5 Cups all-purpose flour
- 2 Teaspoons baking powder
- 6 Large eggs
- 1.5 Cups white sugar
- 0.75 Cups shortening, melted
- 2 Tablespoons shortening, melted
- 1 Tablespoon anise seeds, ground
- 1 Teaspoon vanilla extract
Steps
- Preheat the pizzelle iron according to the manufacturer's instructions.
- In a bowl, mix together the flour and baking powder.
- In the bowl of a stand mixer fitted with a paddle attachment, combine the eggs and sugar. Beat on medium speed until well-blended.
- Add the 0.75 cup plus 2 tablespoons of melted shortening to the egg mixture and beat until blended.
- Gradually add the flour mixture to the wet ingredients, mixing on medium speed until fully incorporated.
- Fold in the crushed anise seeds and vanilla extract with a spatula.
- Drop a teaspoon of batter onto the preheated pizzelle iron.
- Bake for 30 to 40 seconds, or a few seconds longer for a darker pizzelle, until golden.
Cook's Notes:
- For chocolate pizzelle, add 1/4 to 1/2 cup of unsweetened cocoa powder to the flour mixture in step 2.
- To roll pizzelle for filling, do so immediately after they come off the hot iron.
