Cooking Time: 135 minutes
Ingredients
- 1 Cup (c) water
- 0.5 Cup (c) uncooked white long-grain rice
- 0.5 Cup (c) white sugar
- 2 Large egg yolks, whisked
- 1 Tablespoon (tbsp) cornstarch
- 1 Pinch salt, to taste
- 2.5 Cups (c) milk
- 0.5 Cup (c) raisins, optional
- 1 Tablespoon (tbsp) fresh lemon juice
- 2 Large egg whites, whisked
- 0.25 Cup (c) white sugar
Steps
- Bring 1 cup of water and 0.5 cups of rice to a boil in a saucepan over medium-high heat. Reduce heat to low, stir, and cover the pan. Simmer until water is absorbed, about 20 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- In a mixing bowl, whisk 0.5 cups of sugar and egg yolks together. Add cornstarch and a pinch of salt; continue whisking. Gradually add milk. Stir in cooked rice, optional raisins, and lemon juice. Transfer to a baking dish and place inside a larger baking pan. Fill the larger pan with water 1 inch up the sides of the smaller baking dish.
- Bake in the preheated oven until pudding is creamy and most liquid is absorbed, stirring occasionally. Add more water as necessary to maintain the level.
- Meanwhile, place egg whites in a glass or ceramic mixing bowl; whisk until soft peaks form. Gradually add 0.25 cups of sugar while continuing to whisk until stiff peaks form.
- Remove pudding from the oven, leaving it in the larger baking dish. Top pudding with meringue, swirling with a spoon to create soft peaks.
- Increase the oven temperature to 400 degrees F (200 degrees C).
- Bake in the preheated oven until meringue is golden, about 8 to 10 minutes. Serve warm.
