Ingredients

  • 1 Cup (c) water
  • 0.5 Cup (c) uncooked white long-grain rice
  • 0.5 Cup (c) white sugar
  • 2 Large egg yolks, whisked
  • 1 Tablespoon (tbsp) cornstarch
  • 1 Pinch salt, to taste
  • 2.5 Cups (c) milk
  • 0.5 Cup (c) raisins, optional
  • 1 Tablespoon (tbsp) fresh lemon juice
  • 2 Large egg whites, whisked
  • 0.25 Cup (c) white sugar

Steps

  1. Bring 1 cup of water and 0.5 cups of rice to a boil in a saucepan over medium-high heat. Reduce heat to low, stir, and cover the pan. Simmer until water is absorbed, about 20 minutes.
  2. Preheat the oven to 350 degrees F (175 degrees C).
  3. In a mixing bowl, whisk 0.5 cups of sugar and egg yolks together. Add cornstarch and a pinch of salt; continue whisking. Gradually add milk. Stir in cooked rice, optional raisins, and lemon juice. Transfer to a baking dish and place inside a larger baking pan. Fill the larger pan with water 1 inch up the sides of the smaller baking dish.
  4. Bake in the preheated oven until pudding is creamy and most liquid is absorbed, stirring occasionally. Add more water as necessary to maintain the level.
  5. Meanwhile, place egg whites in a glass or ceramic mixing bowl; whisk until soft peaks form. Gradually add 0.25 cups of sugar while continuing to whisk until stiff peaks form.
  6. Remove pudding from the oven, leaving it in the larger baking dish. Top pudding with meringue, swirling with a spoon to create soft peaks.
  7. Increase the oven temperature to 400 degrees F (200 degrees C).
  8. Bake in the preheated oven until meringue is golden, about 8 to 10 minutes. Serve warm.
