Ingredients
- 1.5 Teaspoons (tsp) white sugar
- 1.5 Teaspoons (tsp) active dry yeast
- 1.25 Cups warm water
- 1.5 Teaspoons (tsp) salt
- 2 Tablespoons (tbsp) olive oil
- 3 Cups whole wheat flour
- 3 Pounds (lb) fresh spinach, drained
- 2 Medium onions, minced
- 0.67 Cups lemon juice
- 4 Cloves garlic, minced
- 2 Tablespoons (tbsp) fresh basil leaves, minced
- 2 Tablespoons (tbsp) fresh mint leaves, minced
- 0.75 Teaspoons (tsp) garlic salt
Steps
- In a small bowl, mix together the yeast, sugar, and warm water. Set aside until bubbles form on the surface. Stir in salt and olive oil.
- Place the flour in a large bowl, then add the yeast mixture. Mix to form a soft dough. Knead on a lightly floured surface until smooth and soft, about 15 minutes. Cover with a towel and let rest.
- Coarsely chop the spinach. Boil a large pot of salted water, add spinach, and cook for 2 minutes until wilted. Drain well and return to the pot.
- Add onions, lemon juice, garlic, basil, mint, and garlic salt to the spinach. Cook and stir for 2 more minutes to blend flavors.
- Preheat the oven to 450°F (230°C) with a pizza stone inside.
- Divide the dough into golf-ball-sized pieces and roll into 5-inch diameter disks, about 1/4-inch thick.
- Place 1 tablespoon of spinach filling in the center of each disk. Fold up three sides to form a triangle, leaving a small hole in the center for steam.
- Bake on the pizza stone for 10 to 15 minutes, or until golden brown. Cool on racks before serving.
