Ingredients

  • 4 Whole russet potatoes, sliced
  • 1 Whole onion, sliced
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste
  • 3 Tablespoons (tbsp) butter
  • 0.25 Cups all-purpose flour
  • 0.5 Teaspoons (tsp) salt
  • 2 Cups low-fat (1%) milk
  • 1.5 Cups Cheddar cheese, shredded

Steps

  1. Preheat your oven to 400 degrees F (200 degrees C). Lightly butter a 1-quart baking dish.
  2. Layer half of the potato slices into the bottom of the prepared baking dish. Top with onion slices, then add the remaining potatoes.
  3. Season the layered potatoes with a pinch of salt and ground black pepper to taste.
  4. In a saucepan over medium heat, melt the butter. Mix in the flour and 0.5 teaspoon of salt, stirring constantly with a whisk for one minute.
  5. Gradually stir in the milk, cooking until the mixture thickens. Add the Cheddar cheese, shredded, and continue stirring until melted, about 30 to 60 seconds.
  6. Pour the cheese sauce over the potatoes in the baking dish. Cover the dish with aluminum foil.
  7. Bake in the preheated oven until the cheese sauce is bubbling and the potatoes are tender, approximately 1.5 hours.
