Ingredients

  • 6 Cups chicken stock
  • 1 Pound red lentils
  • 3 Tablespoons (tbsp) olive oil
  • 1 Large onion, minced
  • 1 Tablespoon (tbsp) garlic, minced
  • 1 Tablespoon (tbsp) cumin, ground
  • 0.5 Teaspoons (tsp) cayenne pepper
  • 0.75 Cups fresh lemon juice
  • 0.5 Cups cilantro, torn

Steps

  1. Gather all the ingredients.
  2. In a large saucepan, bring the chicken stock and red lentils to a boil over high heat. Reduce the heat to medium-low, cover, and let it simmer for 20 minutes.
  3. While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the minced onion and minced garlic, cooking until the onion is softened and translucent, about 3 minutes.
  4. Stir the onion mixture into the simmering lentils. Season with ground cumin and cayenne pepper. Continue simmering until the lentils are tender, approximately 10 more minutes.
  5. Puree the soup using a standing blender or an immersion blender until smooth.
  6. Stir in the fresh lemon juice and torn cilantro before serving.
