Ingredients
- 2 Tablespoons olive oil
- 1 Medium onion, minced
- 2 Whole garlic cloves, minced
- 4 Ounces mushrooms, sliced
- 1 Bunch spinach, torn
- 16 Ounces container ricotta cheese
- 1 Pound ground moose, ground
- 0.5 Teaspoon unsweetened cocoa powder
- 0.5 Teaspoon brown sugar
- 24 Ounces jar spaghetti sauce
- 0.75 Cups water
- 1 Tablespoon dried oregano
- 1 Tablespoon Italian seasoning
- 1 Pinch salt, to taste
- 1 Pinch black pepper, ground
- 9 Ounces package no-boil lasagna noodles
- 1.5 Cups shredded mozzarella cheese, shredded
- 0.25 Cups grated Parmesan cheese, grated
Steps
- Preheat the oven to 350°F (175°C). Lightly coat a 9x13-inch pan with olive oil.
- Heat olive oil in a frying pan over medium-high heat. Cook the minced onions and garlic until tender and semi-transparent. Add the sliced mushrooms and cook until soft. Remove from heat.
- In a saucepan, combine the torn spinach and 0.25 cups of water. Cover and cook over medium heat until wilted. Drain and mix with the onion mixture and ricotta cheese in a large bowl.
- In a frying pan, brown the ground moose over medium-high heat, stirring frequently. When almost cooked, stir in cocoa powder and brown sugar to reduce gamey flavor. Once browned, drain excess grease. Add spaghetti sauce, remaining water, oregano, Italian seasoning, salt, and black pepper.
- Spread a thin layer of the meat sauce in the bottom of the prepared baking dish. Arrange a single layer of no-boil lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, top with more meat sauce, and sprinkle with Parmesan and mozzarella cheese. Repeat layers, ending with a generous layer of mozzarella cheese. Cover with aluminum foil.
- Bake in the preheated oven for 45 minutes, or until the lasagna is hot and bubbly. Remove foil for the last 10 minutes for a golden cheese top.
