Ingredients

  • 4 Cups vegetable stock
  • 2 Cups quinoa
  • 0.25 Cups olive oil
  • 1 Whole butternut squash, peeled
  • 2 Small zucchinis, sliced
  • 1 Bunch green onions, minced
  • 1 Cup diced dried apricots
  • 1 Cup dried cranberries
  • 1 Cup fresh parsley, torn
  • 1 Whole lime, juiced

Steps

  1. Bring the vegetable stock to a boil in a saucepan. Reduce the heat to low and stir in the quinoa. Cover the pan and simmer until the quinoa absorbs the liquid, about 10 to 15 minutes. Remove from heat.
  2. Heat the olive oil in a large skillet over medium heat. Cook and stir the butternut squash and zucchinis in the hot oil until slightly browned, about 10 minutes.
  3. Stir the cooked quinoa into the vegetables. Gently mix in the green onions, apricots, cranberries, and parsley.
  4. Drizzle with lime juice to taste, and serve.
