Ingredients

  • 0.75 Cups soy milk
  • 2 Teaspoons (tsp) distilled white vinegar
  • 0.5 Cups crunchy peanut butter
  • 0.33 Cups canola oil
  • 0.67 Cups white sugar
  • 2 Tablespoons (tbsp) honey
  • 2 Teaspoons (tsp) vanilla extract
  • 2 Teaspoons (tsp) flax seed meal
  • 1.125 Cups all-purpose flour
  • 1 Teaspoon (tsp) baking powder
  • 0.5 Teaspoon (tsp) baking soda
  • 0.25 Teaspoon (tsp) salt

Steps

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin pan or line it with paper baking cups. In a measuring cup, combine the soy milk and vinegar, allowing it to stand for about 5 minutes to thicken.
  2. In a large bowl, mix together the peanut butter, canola oil, sugar, honey, vanilla extract, and flax seed meal. Stir in the thickened soy milk.
  3. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually stir this dry mixture into the wet ingredients until just blended. It's okay if the batter is slightly lumpy.
  4. Evenly spoon the batter into the prepared muffin cups.
  5. Bake in the preheated oven for 20 to 25 minutes, or until the tops spring back when lightly pressed.
  6. Allow the cupcakes to cool in the pan set over a wire rack. Once cooled, arrange them on a serving platter and frost with your desired frosting. Enjoy!
