  • 0.75 Cups soy milk
  • 2 Teaspoons (tsp) distilled white vinegar
  • 0.5 Cups crunchy peanut butter
  • 0.33 Cups canola oil
  • 0.67 Cups white sugar
  • 2 Tablespoons (tbsp) honey
  • 2 Teaspoons (tsp) vanilla extract
  • 2 Teaspoons (tsp) flax seed meal
  • 1.125 Cups all-purpose flour
  • 1 Teaspoon (tsp) baking powder
  • 0.5 Teaspoon (tsp) baking soda
  • 0.25 Teaspoon (tsp) salt

Steps

  1. Preheat your oven to 350°F (175°C). Prepare a 12-cup muffin pan by greasing it or lining it with paper baking cups. In a measuring cup, combine the soy milk and vinegar, allowing it to stand for about 5 minutes to thicken.
  2. In a large mixing bowl, combine the peanut butter, canola oil, white sugar, honey, vanilla extract, and flax seed meal. Stir in the thickened soy milk mixture.
  3. In a separate bowl, mix together the all-purpose flour, baking powder, baking soda, and salt. Gradually stir this dry mixture into the wet ingredients until just blended. It's okay if the batter is slightly lumpy.
  4. Evenly distribute the batter into the prepared muffin cups.
  5. Bake in the preheated oven for 20 to 25 minutes, or until the tops of the cupcakes spring back when lightly pressed.
  6. Allow the cupcakes to cool in the pan on a wire rack. Once cooled, transfer them to a serving platter and frost with your desired frosting. Enjoy!
