Ingredients

  • 6 Medium red potatoes, peeled
  • 1 Cup (c) water
  • 0.25 Cup (c) onion, minced
  • 1 Stalk celery, minced
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 3 Hard-cooked eggs, minced
  • 1 Tablespoon (tbsp) fresh dill, minced
  • 0.5 Cup (c) mayonnaise
  • 1 Teaspoon (tsp) yellow mustard
  • 1 Teaspoon (tsp) cider vinegar

Steps

  1. Place the peeled red potatoes in a pressure cooker with 1 cup of water. Cook on high pressure for 3 minutes. If the potatoes are larger, cook for 4 minutes. Allow the steam to release naturally for 3 minutes, then quickly release the remaining pressure and open the cooker. Dice the potatoes once they are cool enough to handle.
  2. In a large bowl, create alternate layers of diced potatoes, minced onion, and celery. Season each layer with 1 pinch of salt and 1 pinch of pepper. Top with the minced hard-cooked eggs and sprinkle with minced fresh dill.
  3. In a small bowl, mix together the mayonnaise, yellow mustard, and cider vinegar. Gently fold this mayonnaise mixture into the layered potatoes. Chill the salad for at least one hour before serving to allow the flavors to meld.
