- 0.25 Cup (c) onion, minced
- 1 Stalk celery, minced
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 3 Hard-cooked eggs, minced
- 1 Tablespoon (tbsp) fresh dill, minced
- 0.5 Cup (c) mayonnaise
- 1 Teaspoon (tsp) yellow mustard
- 1 Teaspoon (tsp) cider vinegar
Steps
- Place the peeled red potatoes in a pressure cooker with 1 cup of water. Cook on high pressure for 3 minutes. If the potatoes are larger, cook for 4 minutes. Allow the steam to release naturally for 3 minutes, then quickly release the remaining pressure and open the cooker. Dice the potatoes once they are cool enough to handle.
