Ingredients
- 3 Large baking apples, peeled
- 2 Teaspoons (tsp) apple cider vinegar
- 1 Cup all-purpose flour
- 1 Teaspoon (tsp) baking powder
- 1 Teaspoon (tsp) kosher salt
- 1 Stick unsalted butter, at room temperature
- 0.5 Cup white sugar
- 2 Tablespoons (tbsp) light brown sugar
- 2 Large eggs
- 3 Tablespoons (tbsp) dark rum
- 0.5 Teaspoon (tsp) vanilla extract
- 3 Tablespoons (tbsp) white sugar
- 1 Tablespoon (tbsp) powdered sugar
Steps
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and line the bottom with parchment paper.
- Peel and core the apples; cut into cubes between 1/4 and 3/8-inch in size. Toss with apple cider vinegar in a large bowl.
- In a small bowl, mix together the flour, baking powder, and salt.
- In another bowl, beat the butter, 0.5 cup white sugar, and brown sugar with an electric mixer until light and fluffy. Beat in 1 egg on high speed until fully incorporated and smooth. Add the second egg and repeat. Mix in the rum, vanilla extract, and half of the flour mixture. Once the flour disappears, add the rest and fold in with a spatula.
- Fold in the apples until evenly mixed into the batter. Transfer the batter to the prepared pan, pressing it in firmly. Smooth the top and dust with the remaining 3 tablespoons of sugar.
- Bake in the preheated oven until a skewer inserted into the center comes out clean, about 45 minutes.
- Remove the cake from the oven and let it cool in the pan for about 30 minutes. Invert the cooled cake onto a wire rack, place a serving plate on top, and flip back over. Dust the top with powdered sugar and serve.
Enjoy this delightful French Apple Cake as a perfect fall dessert!
