- 1 Medium onion, minced
- 2 Whole carrots, minced
- 1 Stalk celery, minced
- 0.75 Cups (cup) pearl barley
- 0.75 Cups (cup) dry brown lentils
- 0.33 Cups (cup) dried porcini mushrooms, drained
- 2 Quarts low-sodium beef broth
- 1 Whole bay leaf
- 1 Teaspoon (tsp) dried parsley
- 0.25 Teaspoon (tsp) dried thyme
- 1 Pinch black pepper, ground
- 4 Cups (cup) button mushrooms, sliced
- 1 Tablespoon (tbsp) dry sherry
Steps
- Heat the olive oil in a large pot over medium heat. Add the minced onion and sauté until limp but not brown, about 5 minutes.
- Mix in the minced carrots and celery; cook for another 5 minutes.
- Add the pearl barley and brown lentils, stirring to coat them with oil. Cook, stirring occasionally, until lightly toasted.
- Pour in the beef broth and add the bay leaf, dried parsley, thyme, and ground black pepper. Bring the mixture to a boil.
- Add the drained porcini mushrooms and reduce the heat to low. Cover and simmer for 25 minutes.
- Add the sliced button mushrooms, cover again, and cook, stirring occasionally, for 30 minutes.
- Mix in the dry sherry during the last 5 minutes of cooking. Taste and adjust seasoning if needed before serving.
