Ingredients

  • 2 Cups frozen whole-kernel corn, divided
  • 0.5 Cups water
  • 0.5 Cups cornmeal
  • 0.33 Cups white sugar
  • 5 Tablespoons margarine
  • 0.25 Cups masa harina
  • 4 Teaspoons milk
  • 1 Teaspoon baking powder
  • 0.5 Teaspoon salt

Steps

  1. Blend 1 Cup of frozen whole-kernel corn, 0.5 Cups water, and 0.5 Cups cornmeal in a blender or food processor until pureed.
  2. In a medium bowl, mix 0.33 Cups white sugar, 5 Tablespoons margarine, and 0.25 Cups masa harina until whisked and smooth. Stir in the pureed corn mixture.
  3. Add the remaining 1 Cup of frozen whole-kernel corn, 4 Teaspoons milk, 1 Teaspoon baking powder, and 0.5 Teaspoon salt to the mixture, stirring until smooth.
  4. Pour the tomalito batter into the top of a double boiler over simmering water. Cover tightly with aluminum foil.
  5. Steam the mixture until firm, about 50 to 60 minutes, checking the water level occasionally and refilling if necessary.
  6. Stir the pudding before serving to ensure a consistent texture. Serve in small scoops.
