  • 16 Ounces (oz) dry fettuccine pasta
  • 0.25 Cups pesto
  • 2 Tablespoons (tbsp) olive oil
  • 3 Tablespoons (tbsp) olive oil
  • 0.5 Medium onion, minced
  • 2 Whole garlic cloves, minced
  • 1 Medium green bell pepper, sliced
  • 0.5 Cups fresh mushrooms, sliced
  • 2 Tablespoons (tbsp) dry white wine
  • 2 Tablespoons (tbsp) lemon juice
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste
  • 1 Pound (lb) scallops
  • 2 Tablespoons (tbsp) Parmesan cheese, grated

Steps

  1. In a large pot with boiling salted water, cook the fettuccine pasta until al dente. Drain and stir in the pesto sauce and 2 tablespoons of olive oil.
  2. Meanwhile, in a large skillet, sauté the onion and garlic in 3 tablespoons of olive oil until soft.
  3. Add the green bell pepper and mushrooms to the skillet and cook until soft, about 3 minutes.
  4. Stir in the dry white wine, lemon juice, salt, and pepper to taste, and bring to a boil.
  5. Add the scallops to the skillet and toss for 2 minutes, ensuring not to overcook them.
  6. Toss the pesto-covered pasta with the scallop sauce.
  7. Sprinkle with grated Parmesan cheese and serve immediately.
