Ingredients

  • 5 Pounds unpeeled potatoes, cubed
  • 6 Large hard-cooked eggs, peeled
  • 1.5 Cups mayonnaise
  • 1 Small red onion, minced
  • 0.5 Cups barbeque sauce
  • 0.5 Teaspoons (tsp) garlic powder
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste
  • 0.5 Teaspoons (tsp) ground paprika, ground (Optional)

Steps

  1. Place the cubed potatoes in a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low and simmer until just tender, about 15 to 20 minutes.
  2. Drain the potatoes and transfer them to baking sheets, spreading them in a single layer. Refrigerate until cold, approximately 2 hours.
  3. In a large bowl, combine the cooled potatoes, diced eggs, mayonnaise, minced red onion, barbeque sauce, and garlic powder. Season with salt and pepper to taste. Mix until well combined.
  4. Sprinkle with ground paprika before serving, if desired.
