- 0.5 Cups brandy
- 10 Ounces (oz) frozen tart red cherries, drained
- 0.5 Cups brown sugar, packed
- 0.75 Teaspoons (tsp) ginger, ground
- 0.25 Teaspoons (tsp) allspice, ground
- 0.25 Teaspoons (tsp) black pepper, ground
- 1 Pinch salt, to taste
- 1 Tablespoon (tbsp) water
- 2 Teaspoons (tsp) cornstarch, sifted
- 4 Ripe pears, halved lengthwise
Steps
- Place the vanilla bean on a foil-lined baking sheet set on a wire rack. Use a kitchen torch to toast the vanilla bean, turning occasionally, until lightly charred and starting to smoke, about 30 seconds. Let it cool for 5 minutes, then split the vanilla bean lengthwise.
- In a medium saucepan, combine the split vanilla bean and brandy. Carefully bring to a simmer over medium-high heat. Reduce the heat to medium and cook, stirring occasionally, until the brandy is reduced to 2 tablespoons, about 7 to 8 minutes. Meanwhile, blend the cherries in a blender or food processor until smooth.
- In a shallow bowl, stir together the brown sugar, ginger, allspice, and pepper. For the sauce, add 3 tablespoons of the brown sugar mixture, the puréed cherries, and salt to the brandy mixture in the saucepan. Return to a boil, reduce the heat to medium, and simmer, stirring occasionally, until the sugar is dissolved, about 3 minutes.
- Remove the vanilla bean from the sauce and scrape out the seeds. Stir the seeds into the sauce, then strain through a fine-mesh sieve. Return the sauce to the saucepan.
- Whisk together the water and cornstarch. Add to the sauce and bring to a boil over medium heat. Reduce the heat to medium-low and cook, stirring constantly, until thickened, about 2 minutes. Remove from heat.
- Dip the cut sides of the pears in the remaining brown sugar mixture to coat evenly. Arrange the pears, cut sides up, on the prepared baking sheet. Use a kitchen torch to brown the sugared surface of the pears, about 5 minutes for the entire recipe. Serve the pears with the sauce. (Chill the sauce in an airtight container for up to 5 days.)
