Ingredients
- 1 Cup warm water
- 0.25 Ounce (oz) package active dry yeast
- 1 Pinch white sugar, to taste
- 3 1/3 Cups all-purpose flour
- 1 Tablespoon (tbsp) olive oil
- 2 Teaspoons (tsp) kosher salt
- 2 Cloves garlic, minced
- 1 Tablespoon (tbsp) fresh basil, minced
- 0.5 Cup olive oil
- 1 Teaspoon (tsp) garlic, minced
- 0.25 Cup tomato sauce, divided
- 1 Cup tomatoes, diced
- 0.25 Cup black olives, sliced
- 0.25 Cup roasted red peppers, drained
- 2 Cups mozzarella cheese, shredded
- 4 Tablespoons (tbsp) fresh basil, minced
Steps
- Prepare the Dough: In a large bowl, dissolve yeast and sugar in warm water. Let it stand until creamy foam forms, about 5 to 10 minutes.
- Mix Ingredients: Add flour, olive oil, and salt to the yeast mixture. Mix until the dough pulls away from the bowl's sides.
- Knead the Dough: Turn the dough onto a lightly floured surface and knead until smooth, about 8 minutes.
- First Rise: Place the dough in a well-oiled bowl, cover with a damp cloth, and let it rise until doubled, about 1 hour.
- Flavor the Dough: Punch down the dough, knead in minced garlic and basil, and let it rise again until doubled, about 1 hour.
- Prepare Garlic Oil: Combine olive oil and minced garlic in a microwave-safe bowl. Heat for 30 seconds.
- Preheat Grill: Preheat an outdoor grill to high heat and brush the grate with garlic oil.
- Shape the Dough: Punch down the dough, divide it in half, and shape each half into an oblong shape, 3/8 to 1/2 inch thick.
- Grill the Dough: Place one piece of dough on the hot grill. Once the bottom is lightly browned, flip it over using two spatulas.
- Brush with Oil: Quickly brush the crust with garlic oil.
- Add Toppings: Top with half of the tomato sauce, tomatoes, olives, red peppers, cheese, and basil.
- Cook the Pizza: Close the grill lid and cook until the cheese melts. Remove from the grill and let it cool for a few minutes. Repeat with the second piece of dough.
