Ingredients

  • 15 Ounces (oz) garbanzo beans, drained
  • 4 Ounces (oz) roasted red peppers, drained
  • 3 Tablespoons (tbsp) lemon juice
  • 1.5 Tablespoons (tbsp) tahini
  • 1 Clove garlic, minced
  • 0.5 Teaspoons (tsp) cumin, ground
  • 0.5 Teaspoons (tsp) cayenne pepper
  • 0.25 Teaspoons (tsp) salt
  • 1 Tablespoon (tbsp) parsley, minced

Steps

  1. In an electric blender or food processor, purée the garbanzo beans, roasted red peppers, lemon juice, tahini, minced garlic, ground cumin, cayenne pepper, and salt. Use long pulses to process until the mixture is fairly smooth and slightly fluffy, scraping down the sides in between pulses.
  2. Transfer the hummus to a serving bowl and refrigerate for at least 1 hour or up to 3 days to allow the flavors to meld.
  3. Before serving, return the hummus to room temperature and sprinkle with minced parsley for a fresh finish. Enjoy with pita bread or your choice of fresh vegetables.
