Serving Size: 6

Cooking Time: 20 minutes

Ingredients

  • 1.5 Pounds (lb) fresh salmon fillet, divided
  • 0.25 Cups red wine vinegar
  • 0.25 Cups olive oil
  • 0.25 Cups soy sauce
  • 0.25 Cups water
  • 1 Tablespoon (tbsp) lemon juice
  • 1 Pinch red pepper flakes, seasoned
  • 1 Teaspoon (tsp) onion powder
  • 1 Teaspoon (tsp) garlic powder
  • 2 Teaspoons (tsp) fresh cilantro, minced
  • 0.33 Cups brown sugar, packed
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste

Steps

  1. Place the salmon in a shallow, flat dish and set aside.
  2. In a blender, combine red wine vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar. Blend until the brown sugar dissolves.
  3. Pour the marinade over the salmon, ensuring it is evenly covered. Cover the dish and refrigerate for at least 2 hours.
  4. Preheat the broiler to low and line a broiling pan with foil.
  5. Remove the salmon from the marinade and place it on the prepared broiling pan. Season with salt and pepper to taste. Transfer the remaining marinade to a saucepan.
  6. Broil the salmon about 6 inches from the heat for 5 minutes. Brush with the remaining marinade. Continue broiling for an additional 5 to 10 minutes, brushing 2 or 3 more times with the marinade. The salmon is done when it is no longer bright red and can be flaked with a fork.
  7. Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, about 5 to 10 minutes.
  8. Use the cooked marinade as a dipping sauce or drizzle over the salmon just before serving. Enjoy!
