Serving Size: 6
Cooking Time: 20 minutes
Ingredients
- 1.5 Pounds (lb) fresh salmon fillet, divided
- 0.25 Cups red wine vinegar
- 0.25 Cups olive oil
- 0.25 Cups soy sauce
- 0.25 Cups water
- 1 Tablespoon (tbsp) lemon juice
- 1 Pinch red pepper flakes, seasoned
- 1 Teaspoon (tsp) onion powder
- 1 Teaspoon (tsp) garlic powder
- 2 Teaspoons (tsp) fresh cilantro, minced
- 0.33 Cups brown sugar, packed
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
Steps
- Place the salmon in a shallow, flat dish and set aside.
- In a blender, combine red wine vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar. Blend until the brown sugar dissolves.
- Pour the marinade over the salmon, ensuring it is evenly covered. Cover the dish and refrigerate for at least 2 hours.
- Preheat the broiler to low and line a broiling pan with foil.
- Remove the salmon from the marinade and place it on the prepared broiling pan. Season with salt and pepper to taste. Transfer the remaining marinade to a saucepan.
- Broil the salmon about 6 inches from the heat for 5 minutes. Brush with the remaining marinade. Continue broiling for an additional 5 to 10 minutes, brushing 2 or 3 more times with the marinade. The salmon is done when it is no longer bright red and can be flaked with a fork.
- Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, about 5 to 10 minutes.
- Use the cooked marinade as a dipping sauce or drizzle over the salmon just before serving. Enjoy!
