Ingredients

  • 6 Large sweet potatoes, peeled
  • 4 Large baking potatoes, peeled
  • 0.5 Cups (cup) mayonnaise
  • 0.25 Cups (cup) Dijon mustard
  • 0.33 Cups (cup) balsamic vinegar
  • 1 Teaspoon (tsp) turmeric, ground
  • 1 Tablespoon (tbsp) chives, minced
  • 1 Pinch salt, to taste
  • 1 Pinch black pepper, to taste
  • 2 Slices bacon, crumbled
  • 2 Green onions, minced
  • 1 Red onion, minced

Steps

  1. Place the peeled sweet potatoes and baking potatoes in a Dutch oven. Cover with water and bring to a boil. Cook until the potatoes are fork-tender but not mushy, about 20 minutes. Drain and allow the potatoes to cool slightly.
  2. In a large bowl, mix together the mayonnaise, Dijon mustard, balsamic vinegar, ground turmeric, minced chives, salt, and black pepper.
  3. Add the crumbled bacon, minced green onions, minced red onion, and the cooked potatoes to the bowl. Toss everything together to coat the potatoes evenly with the dressing.
  4. Serve the salad warm, garnished with extra chives or green onions if desired.
