Ingredients

  • 6 Ounces (oz) boneless pork loin chops
  • 3 Tablespoons (tbsp) butter, melted
  • 0.75 Cups white wine vinegar
  • 0.25 Cups water
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 4 Anchovy fillets, minced
  • 2 Teaspoons (tsp) butter, softened
  • 0.5 Teaspoon (tsp) all-purpose flour

Steps

  1. Pound the pork chops to a thickness of 1/4 inch.
  2. Melt 3 tablespoons of butter in a large skillet over medium-high heat. Add the pork chops and cook until browned, about 2 to 3 minutes per side. Drain the fat from the skillet.
  3. Add the vinegar, water, salt, and pepper to the skillet. Bring to a simmer, then reduce the heat to medium-low. Cover and cook until the chops are tender, about 30 minutes. Ensure an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C). Transfer the chops to a platter and keep warm, leaving the juices simmering in the skillet.
  4. In a small bowl, mash the anchovy fillets with 2 teaspoons of softened butter and flour until a paste forms. Whisk this paste into the simmering cooking juices. Cook and stir until the liquid has thickened and the flour is no longer grainy, about 3 to 4 minutes.
