Ingredients

  • 5 Tablespoons (tbsp) olive oil
  • 2 Tablespoons (tbsp) Madras curry powder
  • 1 Large onion, minced
  • 3 Cloves garlic, minced
  • 15 Ounces (oz) can sliced peaches in syrup
  • 14.5 Ounces (oz) can plum tomatoes
  • 1 Teaspoon (tsp) ginger, ground
  • 1 Cup cream
  • 1 Cup vegetable broth
  • 1 Pinch salt, to taste
  • 1 Pinch black pepper, to taste
  • 2 Cups lettuce, shredded
  • 2 Cups shrimp, cooked

Steps

  1. Heat the olive oil in a large saucepan over medium heat. Stir in the Madras curry powder and cook for 1 minute to release its flavors.
  2. Add the minced onion and garlic to the saucepan. Cook for 8 to 10 minutes, or until the onion becomes transparent.
  3. Stir in the sliced peaches, including their syrup, along with the plum tomatoes and ground ginger.
  4. Pour in the cream and vegetable broth, then season with salt and black pepper to taste.
  5. Simmer the mixture over low heat for 45 minutes, allowing the flavors to meld together.
  6. Serve the soup hot, topped with the cooked shrimp and shredded lettuce for a fresh and vibrant finish. Enjoy!
