  • 1 Cup oyster sauce
  • 1 Tablespoon (tbsp) sherry
  • 2 Pounds (lbs) salmon fillets

  1. Soak the dried shiitake mushrooms in boiling water for 20 minutes, then remove the stems.
  2. In a bowl, combine the softened mushrooms, oyster sauce, and sherry. Stir well and let the mixture sit for 10 to 20 minutes to meld the flavors.
  3. Preheat your oven to 400 degrees F (200 degrees C). Line a large baking dish with foil and lightly grease it with olive oil or nonstick cooking spray.
  4. Place the salmon fillets in the prepared baking dish and pour the mushroom mixture over the top, ensuring the fillets are well-coated.
