  • 0.25 Cup fresh cilantro, minced
  • 2 Tablespoons fresh lime zest, zested
  • 1 Tablespoon olive oil
  • 0.25 Jalapeño chile pepper, minced
  • 1.5 Teaspoons salt
  • 1 Clove garlic, minced
  • 0.5 Teaspoon onion powder
  • 0.25 Teaspoon black pepper, ground
  • 0.25 Teaspoon chipotle chile powder
  • 1 Pound chicken breast tenderloins, marinated
  • 1 Small sweet onion, minced
  • 1 Medium tomato, minced
  • 2 Tablespoons fresh cilantro, minced
  • 0.5 Jalapeño chile pepper, minced
  • 1 Tablespoon fresh lime juice
  • 1 Clove garlic, minced
  • 0.25 Teaspoon black pepper, ground
  • 0.25 Teaspoon sea salt
  • 0.125 Teaspoon chipotle chile powder
  • 1 Sweet onion, sliced
  • 1 Red bell pepper, divided
  • 1 Tablespoon olive oil
  • 0.5 Teaspoon garlic, minced
  • 0.25 Teaspoon salt
  • 0.5 Cup mayonnaise
  • 2 Tablespoons fresh lime juice
  • 16 Thick slices French bread
  • 2 Mangoes, peeled
  • 8 Slices Monterey Jack cheese

Steps

  1. Combine cilantro, lime zest, olive oil, jalapeño, salt, garlic, onion powder, black pepper, and chipotle chile powder in a bowl. Pour into a resealable bag, add chicken, and marinate in the refrigerator for 1 hour.
  2. Mix onion, tomato, cilantro, jalapeño, lime juice, garlic, black pepper, sea salt, and chipotle chile powder in a bowl. Cover and refrigerate.
  3. Toss onion slices, bell pepper, olive oil, garlic, and salt in a bowl; set aside.
  4. Whisk mayonnaise and lime juice together; cover and refrigerate.
  5. Preheat grill to medium-high heat and lightly oil the grate.
  6. Grill chicken until cooked through, about 8-10 minutes. Grill vegetables until tender, about 8-10 minutes. Slice bell pepper into strips.
  7. Spread lime mayonnaise on bread slices. Layer with mango, salsa, chicken, pepper strips, onions, and cheese. Top with another bread slice.
  8. Grill sandwiches until bread is toasted and cheese melts, about 2 minutes per side. Serve immediately.
