Ingredients

  • 2 Pounds (lb) potatoes, peeled
  • 2 Pounds (lb) fresh green beans, trimmed
  • 1 Pound (lb) thick cut bacon
  • 3 Small onions, sliced
  • 2 Cups balsamic vinegar
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. Place the potatoes in a pot and fill with enough water to cover. Bring to a boil and cook until tender, about 10 minutes.
  2. In a separate pot, bring water to a boil. Add the green beans and cook for about 5 minutes. Drain.
  3. Fry the bacon in a large skillet over medium heat until crisp. Remove bacon and set aside.
  4. In the same skillet, fry the onions in the bacon drippings until tender and browned. Remove them and set aside.
  5. Pour balsamic vinegar into the skillet and stir to release all of the browned bits from the bottom of the pan.
  6. In a large bowl, combine the green beans, potatoes, onions, and bacon.
  7. Pour the balsamic vinegar over the mixture and toss to coat.
  8. Season with salt and pepper to taste.
