  • 1 Whole acorn squash, halved
  • As needed - Water
  • 5 Large white potatoes, diced
  • 2 Tablespoons (tbsp) butter
  • 1 Tablespoon (tbsp) Dijon mustard
  • 0.5 Teaspoon (tsp) dried dill weed
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste
  • 0.5 Cups milk

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Place the halved acorn squash cut-side down in a glass baking dish and add 1/2 inch of water.
  2. Bake the squash in the preheated oven until it is soft and tender, about 30 minutes. Once done, remove the squash from the oven and scoop out the flesh.
  3. In a saucepan, place the diced potatoes and cover them with water. Bring to a boil, then reduce the heat and simmer, covered, until the potatoes are soft and tender, about 20 minutes. Drain the potatoes.
  4. Partially mash the potatoes in a large bowl. Stir in the squash flesh, butter, Dijon mustard, dill, salt, and pepper.
  5. Gradually add milk to the mixture, mashing until you reach your desired consistency. Adjust seasoning to taste and serve warm.
