Ingredients

  • 4 Cups long grain rice
  • 8 Cups water
  • 1 Small onion, minced
  • 2 Teaspoons (tsp) salt
  • 0.125 Teaspoon (tsp) annatto powder
  • 0.125 Teaspoon (tsp) paprika
  • 1 Pinch black pepper, to taste
  • 1 Cup frozen peas, thawed
  • 1 4 Ounces (oz) jar pimento peppers, sliced

Steps

  1. Place the rice in a sieve and rinse under cold water until the water runs clear. Shake the sieve to remove excess water from the rice.
  2. In a large saucepan with a tightly fitting lid, combine the rice and water. Stir in the minced onion, salt, annatto powder, paprika, and black pepper.
  3. Bring the mixture to a boil over medium-high heat. Reduce the heat to low, cover the pan, and let it simmer.
  4. After 10 minutes of cooking, gently stir the thawed peas into the rice.
  5. Continue cooking until all the water is evaporated and the rice is tender, about 15 to 20 minutes longer.
  6. Serve the rice garnished with sliced pimento peppers. Enjoy your vibrant Cuban yellow rice!
