- 8 Cups water
- 1 Small onion, minced
- 2 Teaspoons (tsp) salt
- 0.125 Teaspoon (tsp) annatto powder
- 0.125 Teaspoon (tsp) paprika
- 1 Pinch black pepper, to taste
- 1 Cup frozen peas, thawed
- 1 4 Ounces (oz) jar pimento peppers, sliced
Steps
- Place the rice in a sieve and rinse under cold water until the water runs clear. Shake the sieve to remove excess water from the rice.
- In a large saucepan with a tightly fitting lid, combine the rice and water. Stir in the minced onion, salt, annatto powder, paprika, and black pepper.
- Bring the mixture to a boil over medium-high heat. Reduce the heat to low, cover the pan, and let it simmer.
