- 8 Ounces (oz) brown lentils
- 0.25 Cup (cups) olive oil
- 1 Medium onion, minced
- 1 Large carrot, minced
- 1 Tablespoon (tbsp) garlic, minced
- 1 Quart (qt) water
- 2 Whole bay leaves
- 1 Teaspoon (tsp) dried oregano
- 1 Pinch crushed dried rosemary
- 1 Tablespoon (tbsp) tomato paste
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
- 1 Teaspoon (tsp) olive oil, to taste
- 1 Teaspoon (tsp) red wine vinegar, to taste
Steps
- Place lentils in a large saucepan and add enough water to cover them by 1 inch. Bring the water to a boil and cook for 10 minutes, then drain the lentils.
- Heat olive oil in a saucepan over medium heat. Add the minced onion, minced carrot, and minced garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Add the drained lentils to the saucepan, then pour in 1 quart of water. Add bay leaves, oregano, and rosemary. Bring the mixture to a boil, then cover and reduce the heat to medium-low. Simmer for 10 minutes.
- Stir in the tomato paste and season with salt and pepper. Cover and simmer, stirring occasionally, until the lentils have softened, about 30 to 40 minutes. Add additional water if the soup becomes too thick.
