Ingredients
- 1.5 Tablespoons olive oil
- 1 Pound ground turkey, ground (Optional)
- 1 Whole onion, minced
- 2 Whole green bell peppers, divided
- 5 Whole carrots, peeled
- 1 Tablespoon chili powder
- 1.5 Teaspoons cumin, ground
- 1 Teaspoon black pepper, ground
- 29 Ounces canned diced tomatoes
- 1 Cup frozen corn, packaged
- 15 Ounces can black beans, drained
- 15 Ounces can garbanzo beans, drained
- 1.5 Cups chicken broth
Steps
- If using turkey, heat olive oil in a large saucepan over medium-high heat. Cook and stir the ground turkey for about 10 minutes, breaking it up with a spoon until the meat is no longer pink. Remove the turkey and set aside, leaving the oil in the pan.
- Add the minced onion, divided green bell peppers, and peeled carrots to the saucepan. Cook and stir for about 10 minutes until the onion is translucent and the vegetables are tender.
- Stir in the chili powder, ground cumin, and ground black pepper. Pour in the canned diced tomatoes, packaged frozen corn, drained black beans, garbanzo beans, and chicken broth. Bring the mixture to a boil.
- Place about 1.5 cups of the chili mixture into a food processor and puree for about 1 minute until smooth. Pour the puree back into the rest of the chili to thicken.
- Add the cooked turkey back into the chili and bring it to a simmer over medium-low heat.
