Ingredients

  • 1 Medium onion, minced
  • 1.5 Tablespoons (tbsp) margarine
  • 2 Teaspoons (tsp) all-purpose flour
  • 1.5 Teaspoons (tsp) margarine
  • 1 Quart (qt) whole milk
  • 1 Pound (lb) crabmeat, flaked
  • 4 Ounces (oz) crab roe
  • 0.125 Teaspoon (tsp) white pepper, ground
  • 0.125 Teaspoon (tsp) mace, ground
  • 2 Cups milk
  • 0.5 Cup sherry, dry

Steps

  1. In a sauté pan, melt 1.5 tablespoons of margarine over low heat and sauté the minced onion until translucent.
  2. In a double boiler, melt 1.5 teaspoons of margarine. Add the flour and stir until well blended to form a roux.
  3. Combine the sautéed onions and roux in a large stockpot. Add 1 quart of whole milk, stirring constantly until the soup is well blended.
  4. Add the flaked crabmeat and crab roe to the pot. Stir well, then add the ground white pepper and mace. Cook slowly for 20 minutes, stirring occasionally.
  5. Add 2 cups of milk and stir to combine.
  6. Remove the soup from heat and stir in the dry sherry.
  7. Serve the soup in heated bowls and garnish with sour cream, parsley sprigs, or a sprinkle of paprika. Enjoy!
