- 1.5 Pounds (lb) lamb shoulder arm chops, cubed
- 1 Pinch salt, to taste
- 0.5 Pinch pepper, to taste
- 1 Medium onion, minced
- 4 Cloves garlic, minced
- 1 Cup lentils, drained
- 2 Cups chicken broth
- 1 14 Ounces (oz) can diced tomatoes
- 3 Medium carrots, peeled and sliced
- 0.5 Teaspoon (tsp) dried thyme
- 0.5 Teaspoon (tsp) dried sage
- 0.5 Teaspoon (tsp) dried basil
- 2 Cups fresh spinach, shredded
- 1 Whole lemon, zested
- 0.5 Cup ricotta salata cheese, crumbled
Steps
- Heat the olive oil in a heavy pot over medium-high heat. Add the lamb cubes, browning on all sides for about 3 minutes. Sprinkle with salt and pepper. Add the minced onion and garlic, cooking for an additional 2 minutes while stirring frequently.
- Stir in the lentils, 2 cups of chicken broth, diced tomatoes, carrots, thyme, sage, and basil. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer, stirring occasionally, until the lentils are tender but not fully cooked, about 15 to 30 minutes. If the stew appears dry, add more broth, up to an additional cup.
- Add the shredded spinach and cook for another 5 minutes. Stir in the lemon zest. Garnish each serving with crumbled ricotta salata cheese before serving.
