Ingredients
- 3 Pounds boneless pork loin, cubed
- 3 Tablespoons peanut oil
- 3 Stalks celery, minced
- 2 Whole tomatoes, minced
- 7 Whole green chile peppers, minced
- 4 Cloves garlic, minced
- 4 Cups chicken broth
- 10 Ounces jar prepared green chile salsa
- 1 Pinch salt, to taste
Steps
- In a large skillet over medium-high heat, brown the cubed pork in peanut oil, working in 2 to 3 batches to ensure even cooking.
- Transfer the browned pork to a 3 to 4-quart covered casserole dish. Add the minced celery, tomatoes, green chile peppers, and garlic.
- Pour about 1 cup of chicken broth into the skillet used for browning the pork. Stir over high heat to scrape up any browned bits from the bottom, then bring to a boil.
- Add the deglazed liquid to the casserole dish, along with enough additional chicken broth to just cover the ingredients.
- Cover the casserole dish and simmer the stew until it thickens and the pork becomes very tender, approximately 1.5 hours.
- Season with salt to taste before serving. For added heat, stir in a bit of jalapeno salsa if desired.
