Ingredients

  • 2 Whole onions, minced
  • 2 Whole garlic cloves, minced
  • 1 Teaspoon (tsp) fresh ginger, grated
  • 6 Cups water
  • 1 Cup red lentils
  • 1 15 Ounces (oz) garbanzo beans, drained
  • 1 19 Ounces (oz) cannellini beans, packaged
  • 1 14.5 Ounces (oz) diced tomatoes, packaged
  • 0.5 Cups carrots, diced
  • 0.5 Cups celery, minced
  • 1 Teaspoon (tsp) garam masala
  • 1.5 Teaspoons (tsp) cardamom, ground
  • 0.5 Teaspoon (tsp) cayenne pepper, ground
  • 0.5 Teaspoon (tsp) cumin, ground
  • 1 Tablespoon (tbsp) olive oil

Steps

  1. In a large pot, sauté the onions, garlic, and ginger in olive oil for about 5 minutes.
  2. Add the water, lentils, garbanzo beans, cannellini beans, diced tomatoes, carrots, celery, garam masala, cardamom, cayenne pepper, and cumin.
  3. Bring the mixture to a boil, then reduce the heat and simmer for 1 to 1.5 hours, or until the lentils are soft.
  4. Puree half of the soup in a food processor or blender.
  5. Return the pureed soup to the pot, stir well, and enjoy!
