- 1 Bay leaf, ground
- 1 Teaspoon salt
- 0.75 Cups vegetable oil
- 2 Cups celery, minced
- 2 Cups onion, minced
- 2 Cups green bell pepper, minced
- 1 Teaspoon garlic, minced
- 3 Tablespoons file powder
- 2 Teaspoons hot pepper sauce
- 1.5 Cups tomato sauce
- 7 Cups fish stock
- 2 Cups oysters, drained
- 1 Cup crabmeat, shredded
- 1 Pound shrimp, peeled
Steps
- Combine the ground cayenne, white, and black peppers, paprika, dried thyme, dried oregano, ground bay leaf, and salt in a small bowl; set aside.
- In a heavy pot (5 quarts or larger), heat the vegetable oil over medium heat. Add the minced onions, minced celery, and minced green bell pepper. Increase the heat to high. Stir frequently and add the minced garlic, file powder, hot pepper sauce, and the prepared pepper-herb mixture. Cook for 5 minutes, stirring constantly.
- Add the tomato sauce and stir as it reduces over high heat. Add the fish stock and bring to a boil. Reduce the heat and simmer for 1 hour, stirring occasionally.
- When ready to serve, add the peeled shrimp, drained oysters, and shredded crabmeat. Cover and let cook for 5 minutes. Turn off the heat and let the gumbo stand for 10 minutes before serving.
