- 2 Tablespoons (tbsp) olive oil
- 3 Cloves garlic, minced
- 4 Cups diced tomatoes
- 1 Cup dry white wine
- 2 Tablespoons (tbsp) butter
- 1 Pinch salt, to taste
- 1 Pinch black pepper, to taste
- 16 Ounces (oz) linguine pasta, packaged
- 1 Pound (lb) medium shrimp, peeled
- 1 Teaspoon (tsp) Cajun seasoning, seasoned
- 2 Tablespoons (tbsp) olive oil
Steps
- Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the minced garlic and cook for 2 minutes until fragrant.
- Stir in the diced tomatoes and white wine. Bring the mixture to a simmer and cook for 30 minutes, stirring frequently, until the tomatoes have reduced into a sauce.
- Stir in the butter and season the sauce with salt and black pepper to taste.
- Meanwhile, fill a large pot with lightly-salted water and bring to a rolling boil. Add the linguine and return to a boil. Cook the pasta uncovered, stirring occasionally, until al dente, about 11 minutes. Drain well in a colander.
- Season the shrimp with Cajun seasoning, salt, and black pepper.
- Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and cook until pink on the outside and no longer translucent in the center, about 5 minutes.
