- 1 Pound (lb) andouille sausage, sliced
- 1 Large sweet onion, minced
- 1 Medium green bell pepper, minced
- 1 Medium jalapeno pepper, minced (optional)
- 8 Cloves garlic, minced
- 1 Pound (lb) dried red beans
- 1 Ham hock
- 10 Cups water
- 6 Leaves fresh basil, torn
- 1 Pinch Creole seasoning, to taste
- 1 Teaspoon (tsp) black pepper, ground
- 4 Cups hot cooked rice

- Gather all the ingredients.
- In a large skillet over medium-high heat, brown the sausage for 5 to 7 minutes. Use a slotted spoon to transfer the sausage to a slow cooker, leaving the drippings in the skillet.
- Add the onion, bell pepper, jalapeño, and garlic to the drippings in the skillet. Cook and stir over medium heat until tender, about 5 minutes. Transfer the mixture to the slow cooker.
- Add the soaked beans and ham hock to the slow cooker, then pour in the water. Add the basil, Creole seasoning, and black pepper. Cover and cook on Low for about 8 hours, or until the beans are tender.
- If the bean mixture is too watery, remove the lid, increase the heat to High, and cook until the beans are creamy.
