Ingredients

  • 0.25 Cup unsalted butter, melted
  • 1 Cup onions, minced
  • 0.5 Cup green bell pepper, minced
  • 0.25 Cup green onions, minced
  • 3 Cloves garlic, minced
  • 1 Cup evaporated milk
  • 8 Ounces (oz) processed cheese, cubed
  • 0.5 Teaspoon (tsp) unsalted butter, melted
  • 32 Ounces (oz) crawfish tails, peeled
  • 1 Teaspoon (tsp) Cajun seasoning
  • 0.5 Teaspoon (tsp) salt
  • 0.5 Teaspoon (tsp) black pepper, ground
  • 0.5 Teaspoon (tsp) garlic powder
  • 2 Cups vegetable oil
  • 20 Whole pistolette rolls

Steps

  1. Melt 0.25 cups of butter in a saucepan over medium heat. Add onions, bell pepper, green onions, and garlic. Cook and stir until the onions are softened and translucent, about 5 minutes.
  2. Stir in evaporated milk and bring to a simmer. Add the cubed cheese and stir until melted. Reduce heat to low and keep the sauce warm.
  3. In a large skillet, melt 0.5 teaspoons of butter over medium heat. Add crawfish tails and season with Cajun seasoning, salt, pepper, and garlic powder. Cook and stir until the tails are hot and beginning to curl, about 3 to 5 minutes.
  4. Stir the crawfish tails into the cheese sauce and cook for an additional 5 minutes.
  5. Heat vegetable oil in a large skillet to 350 degrees F (175 degrees C).
  6. Add pistolette rolls to the skillet and cook until golden brown on all sides. Transfer to a paper-towel-lined plate to cool.
  7. Once cool enough to handle, cut a slit in one end of each roll and create a pocket using the handle of a spoon.
  8. Stuff each roll with the crawfish mixture and serve immediately.
